frittata

Lazy day. Leftover roasted squash plus lightly steamed purple sprouting broccoli makes a delicious frittata with a crumbling of goat's cheese.  This left me plenty of time to try the first Mellow Baker's challenge from  The handmade loaf...

  1. This is the best way to use leftover veg, mm perked up with PSB.

  2. Yes... I deliberately made more roasted veg than I needed so I could have this the next day... and PSB (or asparagus!) makes it a bit special. I was at Chesterfield market yesterday and both were abundant and reasonably priced. I ought to go there more - there were bowls of veg being sold for a pound - a large cabbage, a large cauliflower, and a handful of carrots - could keep me going for a week. the asparagus was £1.80 a bunch - would be nearer £3 in the supermarket - they were still selling Peruvian asparagus last I looked! I love that your blog reflects seasonal cooking :)
